Cinco de Mayo - Mateo's Salsa


Fellow Texans, do yourself a favor on this beautiful Cinco de Mayo and go get some Mateo's Salsa. It is made right here in Frisco, Texas.  In my opinion it's one of the better salsas you can buy in the stores.....and yes, I'm a salsa aficionado.  In other news, there will be new artwork on the horizon.  We are in the process of selling our house and buying a new one....so my time has been limited.  New work to come....I promise!  In the meantime.....grab some Julio's chips and Mateo's salsa and enjoy.  Mateo, if you are out there?  I'll be your blogging spokesperson if you need one!

How could I forget to post some of my best meals from spring break?  Well, I forgot......sorry.  Better late than never.  I had one of the best green chile cheeseburgers I've ever had at Graham's Grille in Taos.  It was absolutely delicious!  The fried onions, thick bacon, and green chiles were outstanding.  It was paired up perfectly with a Santa Fe Nut Brown.  The very next day on our way home we stopped at Coyote Bluff Cafe in Amarillo.  It's the same place Adam from Man vs. Food stopped when he was in town.  This place is a total dive.  The line was out the door....because there are only about 15 tables in this little place.  I went with the green chile cheeseburger again.  Oh momma!  It was awesome!  I think I declared on the spot that it was the best hamburger I have ever had.  I will still stand by that statement.  If you are in Amarillo, Texas make sure you stop here!  PS. They only take cash so bring some foldin' money.

Cajun Cooking at Mulate's





I went to my cousin's wedding last weekend in Lafayette, Louisiana.  It's the cousin that I made the West Texas Fleur De Lis for.  Well as you know, I try and avoid the chain restaurants when I travel, and this short trip was no exception.  My son and I stopped by Mulate's in Breaux Bridge for some Cajun cooking.  It was recommended by my pal PT Money, who just happens to be a good ole Louisiana boy. This place was legit old school - wood paneling, dim lights, a dance floor, checkered tablecloths, and neon signs.  Right down my alley!  I had a bowl of gumbo and a local beer - LA 31.  The gumbo was outstanding!  I also discovered a Cajun garlic sauce that was at the table.  It was delicious!!  Luckily they were selling it behind the counter....so I bought a couple of bottles.

Cinco de Mayo - Julio's Chips

Most of you already know my love for Tex-Mex food and all things Texana, so I won't bore you with another post about me eating at some taco joint.  On this beautiful Cinco de Mayo day I want to share with you my favorite tortilla chips.  Since chips and salsa are my stranded on a desert island food....no doubt about that....I consider myself an expert on the subject.  I'll make this brief:  Julio's Chips are by far the best chips that I've ever had...end of discussion.  We used to load up 5-6 huge bags down in San Antonio and smuggle them up to Dallas before they sold them here. They have a special seasoning salt on them that separates them from the rest.  If you live in Texas, don't settle for less.  If you don't live in Texas, figure out a way to get some.  Now as for Mexican food, check out last year's post of my favorites.  I encourage you to comment on this one and enlighten me of any chips or Mexican food places I left off my list!  I'll put them on the agenda.

Chris Knight and Fuzzy's Tacos

Last night a friend of mine and a few of his buddies made the drive over to Dan's Silver Leaf in Denton to check out Chris Knight. I've been a fan of CK for about 10 years now, but I had never seen a show. He played an hour and a half acoustic show in front of a packed house. Good stuff!!! If you've never heard of Chris Knight, then you definitely need to check him out. Most of his songs tell a story, and most of the dark storylines focus on hard times and hard living......and death. The quote of the night by a guy behind me was, " He can only go about two songs in a row without singing about death or someone getting killed" Overall great venue and great show! Highlights of the evening besides the show were seeing a dog in the bar, PBR in a can, and Fuzzy's Tacos. We went to Fuzzy's before and after the show. The tacos were about the best I've ever had....and that's saying something! My favorites were the shredded pork tacos, garlic shredded beef tacos, and the shrimp, egg, and cheese breakfast burritos. The queso was awesome too! If you are ever in Denton it's well worth a stop. PT and his wife have been telling me I had to try this place for quite some time now. They were right.

Acuff Steaks - Acuff, Texas

Last Friday while we were in Lubbock we took my uncle out to eat at the place of his choice. It was his birthday and he was kind enough to take us in for a few days. The destination - Acuff Steakhouse, which is about 10 miles east of Lubbock and south of Idalou (where I lived when I was 1). My uncle first ate there as a kid back in 1968 after one of my dad's football games at Tech...I believe the UT game...Tech won by the way. Anyway, this place from the outside looks like a complete dive. It pretty much is. The food on the other hand, was awesome. We went on all you can eat catfish and chicken fried steak night. Oh mama! I had 3 plates. The banana pudding for dessert was about the best I've ever had. So if you are ever on the east side of Lubbock, just drive east on 4th street until you get to Acuff, Texas then loosen your belt a few notches and get to work. Don't be scared by the rusted sign, cracked adobe walls, and pot holes. Thanks for the tip Mike!

Shiner Black Ice Cream Float


Carrie was reading Southern Living this weekend and she raises up and says, "Hey Jeb, did you see this recipe for a beer float?" "Don't we have one Shiner Black left in the fridge? that's what it calls for." My wife is always looking out for things that she knows I'd find intriguing. So on Saturday night I gave it a try. Not a real hard recipe combo here. All you do is take a couple of scoops of vanilla ice cream and a Shiner Black. The result: a Beer Float. The verdict: Yuck. Not my thing. Not to discourage you from trying one.....you may like it. I'm not a big root beer or Coke float guy anyway.

White Christmas Eve in Dallas With a Tamale Dinner


Above is a picture of our traditional Christmas Eve dinner. Pork tamales, guacamole, chili, queso, black bean corn salad and a Dos Equis. As far back as I can remember, we've always had tamales on Christmas Eve. Tonight's meal was delicioso in case you were wondering. We've got 2 inches of snow on the ground as well! That's a rarity for Texas. Merry Christmas Y'all!

Shrimp and Grits - Throwdown Style

After watching Bobby Flay's shrimp and grits throwdown a few months ago with Joe Barnett on the Food Network I knew I was supposed give this recipe a whirl. I don't like to brag, but I really think this is about the best thing that has ever come out of our kitchen. I owe it all to my fine public education from the great state of Texas. They provided me with the ability to read a recipe and measure ingredients, and for that I am very thankful!!!! The grits are amazing and the sauce/roux is oh so good. The shrimp are seasoned with a little kick. Carrie, my wife must have said at least 4-5 times that this was the best thing I had ever cooked....and she's not too far off. Okay, enough of the small talk. Here is a link to the recipe. This recipe has officially made the junkytrinket food hall of fame. It is very easy to make and takes only about 15 minutes or so. Green Chile Time!

Late August means two things: football is about to start and Hatch green chiles are ready to be harvested. We picked up 6 pounds of roasted green chiles at our local specialty grocery store last week. I spent about 30 minutes taking the charred skins off and bagging them in portion sizes. We use green chiles a lot especially in the fall. There are some awesome recipes that include these chiles. Our favorite side dish is the green chile rice casserole. It goes a little something like this:


1 can cream of celery soup

1 pint of sour cream

1 1/2 c. of instant rice

4-6 oz. of green chiles

shredded cheddar cheese


Spray casserole dish, mix first 4 ingredients, top with cheese, bake at 350 for 3o minutes.


There are also some great green chile stews out there and don't forget the green chile cheeseburger. My boy Bobby Flay and his recipe got beat a few weeks back in a throwdown by the guy at the Buckhorn Tavern in San Antonio, New Mexico. My mouth was watering like crazy watching that episode. Look for this episode on the Food Network and record the reruns. I'm gonna give this recipe a whirl once football season gets going.

Marfa NYC





Most everyone who has read this blog before knows my love of Marfa, Texas and the Big Bend region. Well apparently someone else has that love as well but they live in New York City. There is a restaurant in the Lower East Side neighborhood that has a theme of everything Marfa, Texas. Crazy! The name of the restaurant is Marfa NYC. I passed by it and took some pics. They are only open for dinner and we didn't make it down for a taste. The menu looks great! They even serve $6 Lone Star Beer. Maybe those New Yorkers don't know they practically give away the National Beer of Texas down here in Texas. You used to be able to get a 2o pack for like 10 bucks or something. Hopefully Marfa NYC will still be around on my next trip up there.....I'll be sure to drop in for dinner.

As most of you know I'm a big food guy. Whenever I travel I research the best places to eat in that particular city. I save Diners, Drive-Ins, and Dives on the DVR and write down the names of the places on the show for future trips. Our trip to New York City was no different. We wanted good pizza, fries, and a Reuben sandwich. We managed to conquer all of those easily in a city that has more restaurants than I've ever seen in my life. They even have four entire city blocks dedicated to restaurant equipment only.....Bowery St. Alright here is the quick rundown of some of the highlights.
Pizza - Bleecker St. Pizza in West Village -voted best pizza in NYC by the Food Network. It was dang good. We also had sushi at a place in West Village called Oyishi, it was cheap and very tasty! We had a Reuben at the famous Katz's Deli in the Lower East side.....it was outstanding. Right after taking that down we walked to Pommes Frites in East Village for some fries. They are served in a cone and have 32 dipping sauces to choose from. We actually met some friends on Friday night that were on their way back from Europe for drinks at Matt's Grill. Seth and I were drinking Saranac Pale Ale, it was really good!! One of my best meals was a lamb gyro from a street vendor down by City Hall. It was unbelievable! We finished the last night off at Rare Bar and Grill in the Village. They had delicious burgers and a chipotle mayo that was just awesome. I know this is a lot to digest in one post. You would have thought I would have gained weight after this trip...but when you walk 4-5 miles a day luckily you burn it off.

Summer Gumbo


It was 104 yesterday here in Dallas...and no, it's not a dry heat. I decided to make a huge pot of gumbo. I have had a recipe that was burning a hole in my pocket ever since I got it in June. My cousin's girlfriend...well fiancée now is from Lafayette, Louisiana and she made up some gumbo while we were in Colorado a month ago. It was delicious! Some of the best I've ever had. I of course hounded her for the recipe. She was nice enough to share it and write it out for me. I decided last night was as good as any to give it a whirl. It was very easy to make and turned out great. I may play around with some of the ingredients to put my own spin on it. I think I'll have some for lunch today too. 25:28 - The hill was tough today. I'm hoping that the 5K course in McKinney is flat....I don't think I would know what to do if I didn't have to run up a large hill to start my run every morning.

Chicago Hot Dog


One thing that I was most looking forward to when I visited Chicago was having an authentic Chicago style hot dog. I can now mark that off the list. If you are unfamiliar with the Chicago style hot dogs....here is a quick run down.

All beef hot dog- Vienna Beef
Yellow mustard
Chopped white onion (raw)
Neon green relish
Sport peppers
Tomato wedges
Crisp kosher dill pickle spear
Dash of celery salt

I had my dog within the confines of Wrigley Field and it was delicious!

Chicago Dinner #2 - Lucky's Sandwich Company

After the Friday afternoon Cub's game which had an hour and a half rain delay, we walked down Clark St. and slipped into Lucky's before the rain started up again. Lucky's is the home of some of the biggest sandwiches that you have ever seen. They are packed with meat and cheese along with a couple of handfuls of fresh cut french fries and cole slaw. The best thing about them is that they are only $7. They have a challenge that if you can eat 3 of them in an hour you get your picture on the wall of fame along with some other goodies I'm sure. Adam from the Travel Channel show "Man vs. Food" knocked it out with no problem on an episode earlier this season. I opted not to try the challenge but I did knock off one sandwich in about 20 minutes and it was delicious! This was a great after game meal.

Chicago Dinner #1 - Giordano's Stuffed Pizza


When you go to Chicago, you've got to get ya some deep dish pizza. We settled on Giordano's over a couple of other recommended pizza places. It was an hour and a half wait, but well worth it! After 45 minutes of waiting you place your order. We went with the supreme of course. When you are seated, the pizza is ready. It seemed a little confusing to me, but hey had this system down. The pizza was outstanding. I could only eat two pieces.....what seemed to be about 5lbs. worth. It was even better warmed up in the hotel microwave the next morning for a pre-breakfast snack.

Did I just have the best pizza in Dallas? - Louie's Dallas, Texas

Saturday night before our trip over to the Ice House Cultural Center for the photography exhibit we made a pit stop to meet my brother for some pizza. The place we chose was Louie's. We heard about Louie's on the Food Network show Diners, Drive-Ins, and Dives. This is one of my favorite shows. I've seen them all and take mental notes for future trips. Well, a few months ago they featured Louie's and the people they interviewed on the show were raving about how good the pizza was....saying it was the best in Dallas. We had to try it and did. Louie's is a small, dark, and cozy place. It was packed at 5:30. It's got and old school feel with a lot of Chicago memorabilia on the walls....my kind of place. We ordered one pepperoni and jalapeno pizza and one sausage pizza. The crust is buttery and super thin. I must say, it was awesome! We all kind of looked at each other and said, "Why haven't we been coming here the last 13 years?"....we've been missing out. Word to the wise, Louie's doesn't take Visa or Mastercard, just cash money and American Express. When you are in Dallas, you must check out this legit hole in the wall. Then you can ask yourself, "Did I just have the best pizza in Dallas?" It was pretty dang good to me. We will be back, that is for sure.

Travel Tuesday - Poe's Tavern - Sullivan Island, SC



I've been thinking about travel a lot lately. Summer is on the horizon and I've got some nice little get-a-ways planned in the upcoming weeks. Summer vacation is the one of the main perks of being a teacher, right? I like to take full advantage of my time off. As I thought about past summer trips, one came to mind rather quickly. It was our trip to Charleston, South Carolina. Beautiful architecture and historical sights everywhere. The food was excellent as well! One of the highlights was our evening on Sullivan Island. We stumbled onto a cool little hangout called Poe's Tavern. It was real laid back and had great food and drinks. We sat on the patio and talked while the ocean breeze cooled us off. It's named after Edgar Allan Poe, who was stationed there for a year or so while he was in the Army. If you've never been to the Carolina coast, you are missing out. It is really nice!

I've always thought it would be fun to be a food critic and give my two cents worth since I love food so much. I consider myself to be somewhat savvy in the world of Tex-Mex dining. I know you won't all agree with my choices....but it is my my blog and your comments and other recommendations are welcome....I'm always up for trying new places or debating food. Here is my list of top Mexican food places I've been to, categorized by food item.

Chips: Matt's Rancho Martinez - Dallas, Texas - Thin & salty.....perfect!

Queso: Herbert's Taco Hut - San Marcos, Texas - thick and spicy....not soupy.

Salsa: Hacienda Colorado - Denver, Colorado & Chuy's - TX - Both fresh and spicy

Salsa Verde: Luna de Noche - Dallas, Texas - Green, cilantro heavy addicting salsa

Guacamole: Red's Patio Grill - Plano, Texas - My wife swears by it!

Tortillas: Alamo Cafe - San Antonio, Texas - nothing beats a hot one off the comal!

Pastries: Mi Tierra - San Antonio, Texas - this is heaven for a sweet tooth.

Breakfast Burrito: Isabel's Cafe - Port Isabel, Texas - biggest tortilla you've ever seen!

Tacos al Carbon: Ricardo's - Allen, Texas - marinated all night in pico de gallo!

Enchiladas: Abuelo's - Lubbock, Texas - on the money and outstanding cheese!

Fajitas: Mi Cocina - Dallas, Texas - The sunset fajitas are awesome!!!! All time favorite dish!

Brisket Tacos: Luna de Noche - Dallas, Texas

Fast Food / Late night Tex-Mex: Taco Cabana - Hungry at 3 A.M.? Try the Super Tex Mex!


Now that you are hungry go out and get some Tex-Mex!
